Sweet Potato Cottage Pie

1lb lean steak mince
1 leek
1 onion
2 carrots
1 parsnip
1 low salt beef stock cube
1 tsp chopped garlic
1.5 tablespoon cornflour
1 v large sweet potato

Chop the sweet potato and steam. While that is steaming cook off the mince until fully browned through. Chop all the veg finely and add to a saucepan along with 400ml of water, the garlic and the stock cube. Add the mince and simmer for around 20 minutes. Mash the sweet potato and set aside. Mix the cornflour with a little cold water then add to the mince to thicken. Pour into a baking dish and top with the sweet potato. Place in the oven at 180 for 15 minutes to brown on top. Easy peasy! Portion off and keep in the fridge or freeze for later in the week!
